Hing or Asafoetida or ‘Food of the Gods’ or ‘Devil’s Dung’? Yes it is called devil’s dung, because it is one of the ‘smelliest’ spices in the world!
Hing is used widely in Indian cooking, but in fact, majority of this spice is imported to India from Afghanistan & Iran. It is then hugely adulterated with flour to lower its price and increase flowability.
Asafoetida being the resin from a tree, should be used in small amounts to add an umami taste to the dish and is used to harmonize sweet, sour, salty, and spicy components in food. If used in excess, the dish will turn out bitter & inedible.
While some may find this a spice they just can’t do without, others find the smell quite offensive & just can’t stand it.
